There is nothing better than waking up to make a nourishing breakfast, especially when your breakfast tastes like dessert! Better yet, this morning smoothie is packed with heart healthy omega 3’s and satiating protein and fiber!
Vanilla Banana Hemp Smoothie
2 ripe frozen bananas
1 tbsp raw almond butter
5-6 medjool dates
1 cup water (or more, depending on desired consistency)
2 tbsp hemp hearts
1 tbsp hemp oil
1/2 tsp whole vanilla bean powder OR 1 tsp organic vanilla extract
Pinch of Celtic sea salt
Pinch of Cinnamon
Blend all ingredients in a blender until smooth. Sprinkle cinnamon on top
Moving into lunch, this raw kale salad is sure to please! I cannot stress the importance of eating a raw salad daily. Full of vitamins, minerals and enzymes, your body will rejoice! This salad is definitely a favorite, mainly because it contains 2 of my foodie-loves: avocado and kale! Loaded with calcium, magnesium and healthy fats, this salad is the perfect afternoon pick me up!
Raw Red Kale Salad
1 bunch red kale
1 cup cherry tomatoes
1/2 red onion
1 carrot
1 bell pepper
Half medium cucumber
1/2 cup fresh dill
2 tbsp hemp hearts
2 tbsp pumpkin seeds
1 avocado
Juice of 1 lime
1 garlic clove
1/2 tsp Celtic sea salt
1/2 tsp black pepper
1/4 cup water
Begin by shredding red kale or simply chopping it up ‘chiffonade’ style. Half the cherry tomatoes, slice red onion into half moons, julienne the bell pepper and chop cucumber. Slice the carrot thinly, or use a mandolin. Toss all veggies together. Feel free to add any additional veggies. Personally, I like to add some canned black beans or chickpeas to add some protein and fiber for a delicious vegetarian friendly lunch!
Dressing-
In a high speed blender, combine avocado, lime juice, dill, garlic, sea salt, black pepper and water. Dress the salad and toss well. Sprinkle with hemp hearts and pumpkin seeds.
