Peach Scones (Gluten Free, Grain Free, Dairy Free, Low Sugar, Low Carb, Paleo)

Peach. Scones. Need I say more? Peaches just scream summer and I absolutely love getting my hands on some fresh local peaches and baking up muffins, cakes and all of the things!

This was my first attempt at baking grain free scones and they are a win! 

I’m off to Italy next week and I have a feeling my breakfasts will be filled with croissants, muffins and scones – foods I’m not typically used to eating in the morning. But guess what?! I can’t freaking wait. Bring on the chocolate croissants, the pizza and pasta and the espresso 😉

I do not have one single ounce of guilt or food fear about what I’ll be eating in Italy. I’m going to embrace indulging. But here’s the thing. My body craves eating fresh fruits and veggies, fish and quality meats. So although the indulging will definitely be in full effect, so will the healthy eating. There will be a healthy balance -my healthy balance – and I’m ready to embrace it. 

And with that said, these peach scones are definitely a healthy indulgence. In fact, the ingredients are quite simple and if you’re looking to bring the sugar content down even more, I suggest using Lakanto (my favourite sweetener). Lakanto is monk fruit. It’s a no cal sweetener and does not impact blood sugar. I used a bit of maple sugar in this recipe because it adds a slightly caramel flavour, which I thought would compliment the peaches well.

Instructions

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a medium bowl, combine almond flour, coconut flour, sugar, sea salt, and baking powder.
  • In a small bowl, whisk together coconut oil, coconut milk, vanilla extract, and egg. Fold the wet mixture into the dry until a dough forms. (The dough should be pliable but not crumbly or stiff; add a little more milk, a teaspoon at a time, if it's dry.) Fold the peaches into the dough.
  • Place the dough onto the lined pan and form a disk shape/circle, about 1inch thick. Cut into 8 wedges (like a pie or pizza). Move the pieces apart by approximately 1 inch. Bake for about 20-22 minutes, until golden.

Adaptogen Adrenal Fat Bombs (High Fat, Low Carb, Keto Friendly, Paleo)

Who woulda thought you could support your adrenals and eat chocolate all at the same time? Well, it’s possible and these adaptogenic adrenal fat bombs are delicious and super simple to make!

First off, let’s go over some of the key ingredients in this recipe that make it magic (aka. adrenal supportive). 

One of the ingredients used was He Shou Wu – a Traditional Taoist Herb and Jing Tonic. He Shou Wu has been used throughout the centuries as a longevity, anti-aging, blood-building, beauty, and rejuvenation food. Long revered as one of the most important and powerful herbs in Chinese Medicine, He Shou Wu (Polygonum multiflorum), has a rich and mystical history due to some of its more exotic—and highly sought after—benefits and effects. It is rich in iron and zinc—two hard-to-get essential minerals—and is wonderful for:

  • Improving stamina 
  • Promoting red blood cells
  • Enhancing immune function
  • Increasing antioxidant activity 
  • Can tonify and nourish the blood, hair, skin, nervous system, sexual centre
  • Can stimulate the body to produce many longevity-promoting substances, including superoxide dismutase
  • Can stimulate and harmonize adrenal gland function and promote general endocrine system balance

Sounds amazing right??

Then I added in some Anandamide. I know, another strange sounding ingredient. This is an exquisite blend of unsweetened, raw heirloom cacao and tonic herbs. It’s hand-crafted in small batches using organic or wildcrafted ingredients and freshly-ground spices. As you can see from the picture, there is ZERO sugar used in this recipe. If you’d like to sweeten it, I would suggest using Lakanto or maybe stevia. You can add in raw honey or maple syrup, but that will take the sugar content up quite a bit and defeat the purpose of a strictly high fat treat.

Adaptogenic Adrenal Fat Bombs

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/3 cup cacao powder
  • 2 scoops Perfect Keto Collagen in chocolate
  • 2 tbsp Anandamide
  • 1 tbsp He Shou Wu

Instructions

  • Add almond butter and coconut oil to a pot and melt over medium-low heat.
  • Once soft and melting, add in remaining ingredients.
  • Stir together until well combined.
  • Pour into silicon molds, then place in the freezer to set for roughly 30-45 minutes. You can use large or small molds, or pour this onto a tray lined with parchment paper to make fat bomb "bark."

Chocolate Chip Cherry Muffins (Gluten Free and Grain Free)

These chocolate chip cherry muffins are so good! The combination of chocolate and cherry together is my FAV! 

I often whip up a smoothie with chocolate protein powder + frozen cherries + coconut milk + almond butter and it is so incredibly delicious. Oh! and my fat bombs! If you’re a chocolate-cherry lover, you’ve got to try my Chocolate Coconut Cherry Fat Bombs. They are so easy to make and perfect for a high fat, low carb diet. 

The truth is, as delicious as these muffins are, I’m in the process of eliminating almonds/almond flour/almond butter from my diet. They came up high on my food intolerance test + I’ll be eliminating all nuts and seeds for my AIP protocol, so I won’t be able to have these muffins for at least a good 6 weeks, once I reintroduce almond products back into my diet. 

When I baked these up last week I enjoyed them like they were my last meal!! Giving up almond butter is HARD. It’s really one of my favourite things to eat, plus I often bake with almond flour. But, you can bet I’ll be getting creative in the kitchen over the next few weeks, testing out different kinds of flours.

A food elimination diet definitely has its challenges, but if you’re currently struggling with autoimmune issues or hashimoto’s, it might be time to consider the AIP diet

And here’s the thing. There is NEVER going to be the right time to go on any type of ‘diet.’ With family events and parties and commitments, it can seem like following any type of program is just never going to happen. But, YOU have to create the time and make it a priority. 

With easter around the corner and lots on family dinners and brunches, I’m going to be faced with some challenges – for sure! But, I also recognize that there will never be the “right time” for healing. The right time is now. The right time is one I create. 

My priority is my health. It is very high on my list of values, which is why making these changes to my diet and lifestyle isn’t something I ever question. I just dive right in and go for it and at the same time recognize that it might not be perfect.

You are better off doing SOMETHING versus doing NOTHING. So if you’ve been holding back from losing weight, balancing your hormones or healing your autoimmune disease, the time to get started is right now. Dive in, trust the process and just begin. 

So, with all that said, let’s get to these delicious Chocolate Chip Cherry Muffins. They are gluten free and grain free, which is perfect for many elimination protocols and diets (but unfortunately, not AIP friendly).

Ingredients
  1. 1 cup almond flour
  2. 1/4 cup cacao powder
  3. 2 tbsp ground flaxseed
  4. 1 1/2 tsp baking powder
  5. 1/2 tsp baking soda
  6. 1/4 tsp sea salt
  7. 2 large eggs
  8. 1/4 cup unsweetened applesauce
  9. 1/4 cup almond butter
  10. 3 tbsp lakante sweetener

  12. 1 cup frozen cherries, roughly chopped
  13. 1/3 cup lily's sugar free chocolate chips
Instructions
  1. Preheat oven to 350F. Line muffin tin with liners.
  2. Add all DRY ingredients to a food processor and blend until well combined. T
  3. hen add WET (minus the cherries & chocolate chips) and blend until combined.
  4. Scoop batter into bowl. Add in cherries and chips and fold in gently. Spoon batter into muffin liners, filling 3/4 of the way.
  5. Bake for 26-28 mins, until a toothpick inserted comes out clean. Cool for 10 mins.

Cacao Coconut Almond Butter Cups (Keto, High Fat & Sugar Free)

I’ve been obsessed with making fat bombs. Mainly because I love spending time recipe creating, but also because I want to be able to enjoy something sweet every now and again without a boat load of sugar. 

Enter these fat bombs. 

They are high fat and sugar free. Now of course, you can always add in more sweetness if you like as cacao can be slightly bitter, but I much prefer them without the sweetness and the extra guilt. 

Not to mention the insane cravings that start to follow once you consume too much sugar. Ever notice that? You go sugar free or low carb for a while and then – BAM – one bite of a sweet cake or cookie or piece of bread and your cravings come back full force?

It’s normal. Sugar triggers pleasure receptors in your brain, which cause you to want more and more and more. 

This is why I like to keep my sugar intake very low and my fat intake high. It keeps my sugar cravings at bay, it helps to balance my blood sugar, it keeps my brain fuelled and it provides me with lots of energy. Plus, fat is incredibly important for hormonal health. 

Fats are structural components of some of the most important substances in the body, including prostaglandins, which are hormone-like substances that regulate many of the body’s functions.

You need fats because they regulate the production of sex hormones, which can often be the reason why some teenage girls and women in general can experience amenorrhea (no period). 

So if you’ve been hesitant about including fats in your diet, don’t be. Just be sure to choose the right kinds, such as: coconut oil, ghee, grass fed butter, animal fats (ideally from organic, grass fed, pasture raised animals), olive oil, avocado oil and avocado. 

I hope you enjoy these yummy fat bombs as much as we do. We keep a bunch in the freezer all the time for a quick grab and go snack or treat. I originally made these for my trip out to Banff. I wanted to have something healthy and high fat to fuel me while on the plane. 

Originally, I made these without the almond butter and they were great, though a little more on the bitter side. As a note – the almond butter does mean they will melt quicker, so just an FYI if you do plan on traveling with them.

I also used my new silicon molds which I’m obsessed with. They are amazing for baking as nothing sticks to them, plus they are reusable.

Cacao Coconut Almond Butter Cups (Keto, High Fat & Sugar Free)

Ingredients
  1. 3 tbsp raw cacao powder
  2. 3/4 cup cacao butter, cut into small chunks
  3. 2 tbsp coconut oil or ghee (I like the vanilla ghee from Lee's Ghee)
  4. 3 heaping tbsp almond butter (crunchy or smooth)
  5. 1/4 tsp vanilla extract
  6. Pinch of sea salt
  7. 2 tbsp lakanto or swerve, optional (you can add more or less depending on the amount of sweetness you prefer. Liquid stevia would work well too).
  8. 1/2 cup coconut chips, roughly chopped or broken into small pieces (chopped nuts would work well too)
Instructions
  1. Line a large muffin pan with silicon liners.
  2. Over a double boiler, melt cacao butter and coconut oil or ghee together.
  3. As they start to melt, add in almond butter and cacao, gently stirring everything together.
  4. Add in vanilla extract, sea salt and sweetener of choice.
  5. Once melted, remove from heat and stir in coconut chips.
  6. Pour into silicon muffin molds. I filled mine just over 1/4 of the way. I didn't want them to thick.
  7. Place in the freezer for 1 hour to set. Then remove from freezer when ready to eat. If using the silicon molds, they pop right out of them with ease!

Chocolate Coconut Cherry Fat Bombs (High Fat, Low Carb)

Chocolate, coconut and cherry is pretty much a magical match made in heaven. 

These delicious fat bombs are so-damn-good and perfect to whip up for your special Valentine. 

I just absolutely love cherries! I buy tart frozen cherries and always keep a stash in the freezer. They are perfectly sweet and in fact, are great for combating inflammation and helping with sleep as they contain melatonin. 

Melatonin is a hormone secreted at night by the pineal gland in the center of your brain to help to regulate your circadian rhythm. In order to produce adequate amounts of melatonin, it’s important that you head outside for at least 30 minutes – 2 hours a day (regardless of the weather), as natural light exposure helps support your natural circadian rhythm.

But melatonin is not only produced in the pineal gland—it is also naturally present in certain foods, cherries being one of them. Their was a study done on participants who drank tart cherry juice post workout to help with their recovery and they found that not only did the cherry juice help combat inflammation, but it also increased melatonin levels. 

Now, if you eat these delicious gems during the day, trust me, you’re not going to all of a sudden do a face plant on the floor and fall asleep. It’s not that strong! But they might help encourage better sleep – bonus!

As we age, we produce less melatonin, which is often the reason why so many elderly men and women struggle with insomnia. And if you throw in autoimmunity or other health complications and conditions, lacking sleep means your body is not healing. 

As I work on healing my Hashimoto’s, sleep has become my number one priority. And guess what? I’m feeling like a million bucks because I’ve been sleeping so well. 

Last year I had so many issues with sleep, getting to sleep, staying asleep and because of it, my healing process was taking a long time. I felt exhausted (obviously) and this started to affect my workouts and my day-to-day. 

Now, I’m working out 4 days a week and sleep through the night. I do take a cocktail of supplements before bed and I’ve been using the true dark glasses at night if I’m watching netflix. These glasses have been a GAME changer for blocking out blue light. I recommend getting both the yellow (for the computer) and the red glasses (the stronger ones for tv and sleep).

Chocolate Coconut Cherry Fat Bombs

Ingredients
  1. CHERRY FILLING
  2. 1 cup full fat coconut cream (from top of canned coconut milk)
  3. 3/4 cup frozen tart cherries, pitted
  4. 1 tbsp lakanto or swerve (optional)
  5. 1 tsp vanilla extract
  6. CHOCOLATE COATING
  7. 1/3 cup dark chocolate chips
  8. 2 tbsp shredded cacao butter (optional)
  9. 1 tbsp coconut oil
Instructions
  1. CHERRY FILLING: place all cherry filling ingredients into a food processor and combine until creamy. Spoon mixture into mini silicon molds. (you can use any size, I personally like the mini ones. My silicon mold holds 30). Spoon mixture about 3/4 of the way, leaving space to pour in chocolate.
  2. Place in the freezer for 20-30 minutes to harden.
  3. CHOCOLATE COATING: over a double boiler, melt together chocolate chips, cacao butter and coconut oil. Once melted and smooth, remove fat bombs from freezer and pour in chocolate over each mold.
  4. Place back in the freezer for 1-2 hours to set and harden. When ready to serve, remove from freezer and pop out fat bombs from the molds. The silicon is great as the fat bombs don't stick and pop right out! These fat bombs melt fairly quickly, so eat right away once out of the freezer.
  5. Can keep stored in the freezer for up to 2 months.

Grain Free Wild Blueberry Chia Muffins

Ok, so, my muffins look green! That’s what happens when you combine BLUEberries with baking soda. It’s chemistry people! But don’t let the colour deter you from making these delicious gems….because they are delicious.

In fact, it’s easy to transform a standard muffin into a gluten free, dairy free, low sugar, grain free treat and still have it taste delicious!

The honest truth is that more and more people are becoming conscious of ditching the grains, dairy, gluten and sugar (which is a good thing!!) and that really excites me!

Why? Because that’s what my cooking and baking is all about and that’s what my diet currently reflects.  

Of course, some sugar, dairy and gluten creeps it’s way into my diet every now and again, but it’s rare. And being able to recognize how I feel by eliminating these food culprits is enough for me to keep them out of my diet. 

With my hashimoto’s, it’s really important that I avoid certain foods that could exacerbate my autoimmunity. This is why grains/beans/legumes/gluten/dairy has gotten the boot. And trust me, it’s not easy. 

Sometimes I find myself sprinkling goat cheese or sheep cheese into my salad and on my most recent trip to Florida, grains and gluten found their way onto my plate. I thankfully ate at great restaurants that focused on local, organic and sustainable ingredients, but still… gluten is gluten. 

Wherever you are on your health journey, it’s important that you be gentle with your body. It’s important not to beat yourself up because you had a slip up, because you ate the extra slice of bread, or that your travelling endeavours made it difficult to completely eliminate your food culprits. 

Now with that said, it’s also important to recognize how badly you may feel by letting these certain foods creep into your diet. The truth is, gluten (for most people) can cause an autoimmune flare up just by one tiny BITE! 

In my case, and while traveling, I made sure to drink adequate amounts of water, get lots of sleep, take my digestive enzymes to help me break down my food better, take my probiotics, and follow my adrenal-thyroid supplement protocol. 

And this is why what you do MOST of the time is so important. 98% of the time, this is where I focus my energy – on staying well and vital, taking my supplements, moving my body, getting adequate sleep, slowing down, eating well and eliminating my food culprits. 

It’s not always perfect. It’s a process. In fact, it’s a lifelong journey and I’m in it for the long haul of experimenting, testing, eliminating, re-introducing and more importantly, enjoying the process of learning. 

As with this recipe, I’m so happy that coconut is NOT on my autoimmune elimination list (some people do react to it). These #grainfree #glutenfree #diaryfree muffins are super delicious, light, fluffy, and loaded with protein and fiber. 

1/4 cup of coconut flour (here’s the one I used here), provides close to 10g of fiber and 4g of protein. With the addition of 6 protein rich eggs in this recipe, these muffins won’t be spiking your blood sugar – which is key to supporting overall hormonal health, weight, energy and supporting your menstrual cycle.

Ingredients
  1. 1 cup organic coconut flour
  2. ½ tsp sea salt
  3. 1 tsp baking soda

  2. Combine the coconut flour, baking soda & salt in a bowl.
  3. In a bowl whisk together the milk, maple syrup, eggs, coconut oil and vanilla.
  4. Add the chia seeds and blueberries combine.
  5. Pour the wet ingredients into the dry ingredients and mix well.
  6. Spoon the batter into the muffin tray, filling cups about 3/4 of the way.
  7. Bake at 350F for 25-30 minutes, until golden brown and cooked through.
  8. Cool on rack and serve.

Avocado Fudgesicles

Girrrrrllll, this is the perfect summer treat that you are gonna wanna make all.summer.long.

Summer is not only my favourite time of year because it’s hot and sunny out, but because I feel like I can get extra creative with recipes that are refreshing and healthy all at the same time. 

This delicious fudgey gems are gonna be your new fav! And they only take minutes to make. You do need to be patient and let them set for a few hours, but they are worth the wait. 

I’m sure you’ve seen your fair share of popsicles popping up on your social media feeds, and why not! Homemade popsicles are so easy to make and with just a few ingredients you can whip up a healthy treat minus the added sugars and junk you find in most store bought brands. 

Well you know that homemade and all natural is how we roll over here at Holistic Wellness. I wouldn’t have it any other way!

If you haven’t tried out my Avocado Chocolate Pudding yet (which totally doubles as a face mask), you have got to get your hands on that recipe, like now. 

I basically took that recipe and make fudgesicles out of it. I know, genius right!? 

If you’ve got little kiddos at home they won’t even know there is healthy avocado in here. There’s nothing like getting a little sneaky. And sometimes, it’s your hubby you’ve got to hide the ingredients from, not the kiddos! Hey, a healthy girls gotta do what a girls gotta do. I’m not judging!

To sweeten these gems I used BeeKeepers Raw Honey with Cacao. It was the perfect addition to these healthy treats. If you don’t have this honey, not to worry. Any raw honey will do (I love Beekeepers and Fairhaven Farms – local and sooo good!) or you can use maple syrup.

Ingredients
  1. 2 small avocados
  2. 1 cup full fat coconut milk
  3. 3 tbsp beekeepers naturals cacao honey (or maple syrup or regular raw honey)
  4. 1 tsp vanilla extract
  5. 1⁄3 cup unsweetened cacao powder
  6. Pinch of sea salt
  7. Melted chocolate (optional, for drizzle)
Instructions
  1. Add all ingredients into a food processor and puree until smooth and creamy.
  2. Transfer mixture to popsicle tray, and insert sticks.
  3. Freeze for 2 hours or overnight.

Fat PHAT Bombs – High Fat, High Protein & Sugar Free

Are you ready for a sugar free treat that is full of healthy, gut supportive, hormone loving FAT?

Ya… I thought you’d be excited!

My good friend Marni, over at the Ultimate Health Podcast shared a recipe for Carob Cookies on her FB page the other day and I went ahead and just had to make them and added in a few extra ingredients of my own.

And the best of part; you only need are 5 simple and healthy ingredients, that you probably already have on hand! #bonus

One of the ingredients in this delicious fudge or bark or phat bomb (it’s just so many things, I’m not sure what to call it!), is carob.

If you don’t have carob powder, you can use cacao powder, but you would need to add some sweetness to the batter. I would suggest Lakanto or maybe stevia. This would keep it sugar free. Otherwise, you can use some brown rice syrup or maple syrup. Raw cacao powder is quite bitter, so it would definitely need a touch of sweetness.

So why carob?

Well, you know I’m a big fan of cacao and it’s loaded with lots of minerals and goodness, but it does contain caffeine and theobromine, which can be stimulating for some people. And, often times, when people are looking to lower inflammation and/or histamines in their body, chocolate/cacao needs to be eliminated, whereas carob can still be enjoyed! 

In the effort to support those trying to lower inflammation and heal their gut, carob is a great alternative to chocolate/cacao. And best part of all, this recipe is incredibly supportive for those who are trying to eliminate sugar. 

I know how difficult it can be to kick the sugar habit, but by introducing more healthy fats and quality protein, you’d be surprised how quickly your cravings can diminish.

Ingredients:

  • 5 cups large coconut flakes
  • 2 tbsp carob powder (toasted or roasted, NOT raw! I use Bob’s Red Mill brand, otherwise use cacao powder)
  • 1/2 cup coconut oil (not melted, but soft, room temperature)
  • 2 heaping tbsp raw almond butter
  • 1 scoop organic Chocolate Whey Protein Powder (I used Progressive Organic Whey. Use your favourite brand and type).

Directions:

Blend all ingredients together in a blender or food processor. Scoop out onto a plate or tray covered with parchment paper. Evenly spread out ‘batter’ and put in the freezer for 30-40 minutes. Once frozen, break up into pieces and enjoy!

Sweet Potato Protein Brownies

We regularly eat sweet potatoes in our house. 

From mashed, to roasted to steamed (with lots of grass fed butter) to baked, to spiralled noodles, I just absolutely love this mighty tasty root veggie. 

The good news is that sweet potatoes are low glycemic, meaning that they digest at a slower rate keeping your blood sugar more stable; they are high in fibre, which is amazing for supporting gut health, and they are loaded with Beta-Carotene (vitamin A), vitamin C and have lots an anti-inflammatory properties. 

Now you can see why I love them so much! OH! And they taste sweet! 

I decided to combine my baking skills with this tasty veggie and bake up some brownies. I really had no idea how they would turn out, which is what happens when it comes to recipe testing, but I was incredibly surprised by how delicious, easy and tasty these brownies were!

It’s important to note, the texture of these brownies are a lot softer (or moister, if that’s even a word!) than most brownies, given that it does contain mashed sweet potato. Leaving them at room temperature for a little over an hour will help them to slightly firm up.

I added in 2 scoops of my favourite protein powder to help further support blood sugar levels. This is optional, but I definitely encourage you to include some if  you have it on hand. 

I think next I’m going to try my hand at sweet potato cupcakes with a delicious vanilla frosting! Sounds good right? Ya, I might have to get on that. 

In the meantime, enjoy these amazing Sweet Potato Protein Brownies guilt free! They are perfect pre workout, for school snacks or just because! 

Sweet Potato Protein Brownies
Serves 6

Ingredients
  1. 1 ½ cups sweet potato, cooked and mashed
  2. ½ cup coconut flour
  3. 2 scoops Progressive Organic Chocolate or Vanilla Whey protein powder (optional)
  4. ¼ cup Progressive Organic Coconut Oil, melted
  5. 1 tbsp coconut sugar
  6. 2 eggs, lightly beaten
  7. ½ tsp cinnamon
  8. ½ tsp ground vanilla bean or extract
  9. 1 tsp baking soda
  10. Pinch of sea salt
  11. 1/3-1/2 cup dark chocolate chips (I used Enjoy Life dairy free mini chocolate chips)
Instructions
  1. Preheat oven to 350F. Line an 8x8 or 9x9 brownie pan with parchment paper.
  2. In a large mixing bowl, add all ingredients except the chocolate chips. Stir until well combined. The dough will be slightly thick, but still smooth.
  3. Fold in the chocolate chips and gently stir to combine. Pour dough into brownie pan and smooth out. Bake until edges start to turn golden brown, roughly 25 minutes. Remove from oven and let cool for 10 minutes before slicing into squares.
  4. Store in an airtight container in the fridge for up to 5 days.
