These CHOCOLATE ZUCCHINI MUFFINS are legit 😋 I These CHOCOLATE ZUCCHINI MUFFINS are legit 😋 I added in some medicinal mushrooms to boost up the antioxidant content + get a nice dose of adaptogens 👌

Oh! And the best part. You can whip it all up in your blender or food processor. Meaning = super easy + less mess 🙌🏻

Here’s the recipe👉

INGREDIENTS:
— 2 cups almond flour
— 1/2 tsp baking soda
— 1/3 cup cacao powder
— 1/3 cup golden monkfruit 
— 1/4 tsp sea salt
— 1 tsp cinnamon
— 1/2 tsp vanilla extract
— 3 eggs
— 1 Tbsp @eversiowellness balance mushroom blend (optional)
— 2 Tbsp milk of choice 
— 1/4 cup coconut oil, melted
— 1 cup grated zucchini, liquid squeezed out
— 1/2 cups chocolate chips

DIRECTIONS:
Preheat oven to 350F and line your muffin pan with liners. Start by grating your zucchini. Then place into a nut milk bag or paper towels and squeeze out as much liquid as possible.

Add all ingredients to your blender or food processor (minus the chocolate chips) and blend until we’ll combined. 

Add in chocolate chips and gently pulse. Scoop out into muffin pan. I got 10 muffins out of this batter. Add additional chocolate chips on top (optional) and bake for 20-22 minutes. Insert a toothpick to make sure middle is cooked through.

Language is powerful. We hear a lot about negative Language is powerful. We hear a lot about negative thinking, manifesting & lack mentality in regards to life and business, but do we pay attention to the language we use about our health & body?

There’s nothing wrong with a achieving a certain health & body goal. If you’re proactively working towards bettering your health, hormones, energy, etc, I commend you 💕

What we have to start paying attention to is the WHY.

WHY are we working towards X goal? Is it because it’s what you see others doing and think that’s what you need to do? Is it because it’s the latest trend or fad diet?

“Cheating” on your diet means it’s probably not sustainable in the first place. 

“Being shredded or having a 6-pack” has nothing to do with being healthy nor will it impact your self worth. Being overweight comes with health challenges, but so does being underweight. 

“Looking how you eat” creates a cycle of guilt and shame around food choices.

Pay attention to what you say about your body and diet. Maybe it’s not your diet that needs “fixing” but your mindset and internal self talk.

Food flexibility and enjoyment are key for health, balance and making progress. I think it’s time to let go of these above phrases 🙅‍♀️
