Kale Pineapple Smoothie & “Bacon” Tempeh, Avocado, Lettuce & Tomato Sandwich-Easy Recipes for Meatless Monday!

Let’s wake up those Monday morning tastebuds with something refreshing! Now I know most you don’t think of a morning smoothie with Kale! But trust me! My amazing blend below is incredibly sweet and rejuventating that you won’t even know your downing a big ol’ glass of kale! So…why are we adding kale to our smoothie? Because it’s loaded with minerals, especially calcium, and helps to alkalinize our system. This smoothie also contains cooling cucumber, so you’ll get a whopping dose of silica. Silica keeps skin supple, helps maintain healthy bones and strengthens brittle nails. Now let’s get our blend on…….

 

Kale and Pineapple Smoothie

Ingredients:

1 bunch kale
1 chunk cucumber (UNpeeled! Keep peel on for silica)
2-3 slices pineapple
1 banana
2 cups coconut water of fresh spring water

Blend all ingredients together

 

TALT Sandwich- Tempeh, Avocado, Lettuce and Tomato

This sandwich is vegan friendly and full of flavor. I typically like making my own homemade BBQ sauce, but this store bought smoky bacon tempeh comes in handy when you need a quick, easy to prepare meal.

Ingredients:

2 slices sprouted bread (I like stonemill bakery)
half an avocado, sliced
2-3 slices tomatoes
Your choice of greens- spinach, romaine, boston lettuce
3-4 strips smoky maple bacon tempeh (Tofurky brand)
1 tbsp olive oil
1 tsp veganese
1 tsp roasted garlic hummus, optional

Directions:

Heat olive oil over medium heat, and saute tempeh for 2 minutes on each side. Toast bread and spread with veganese and hummus. Add avocado, tomato and lettuce and top with tempeh.
