In today’s solo episode I’m sharing some stories from my recent trip to Costa Rica. I had originally planned to make the trek with one of my friends but, just days before the trip, things took an unexpected turn and she cancelled 👎

So, I decided to go on my own! Traveling solo was definitely uncomfortable - especially when heading to the jungle for the first time!

All in all my trip was amazing and I went primarily to attend the @elementalrhythm breath work facilitator training, which I share more about in this episode and my desire to dive into this work.

These CHOCOLATE ZUCCHINI MUFFINS are legit 😋 I

These CHOCOLATE ZUCCHINI MUFFINS are legit 😋 I added in some medicinal mushrooms to boost up the antioxidant content + get a nice dose of adaptogens 👌

Oh! And the best part. You can whip it all up in your blender or food processor. Meaning = super easy + less mess 🙌🏻

Here’s the recipe👉

INGREDIENTS:
— 2 cups almond flour
— 1/2 tsp baking soda
— 1/3 cup cacao powder
— 1/3 cup golden monkfruit
— 1/4 tsp sea salt
— 1 tsp cinnamon
— 1/2 tsp vanilla extract
— 3 eggs
— 1 Tbsp @eversiowellness balance mushroom blend (optional)
— 2 Tbsp milk of choice
— 1/4 cup coconut oil, melted
— 1 cup grated zucchini, liquid squeezed out
— 1/2 cups chocolate chips

DIRECTIONS:
Preheat oven to 350F and line your muffin pan with liners. Start by grating your zucchini. Then place into a nut milk bag or paper towels and squeeze out as much liquid as possible.

Add all ingredients to your blender or food processor (minus the chocolate chips) and blend until we’ll combined.

Add in chocolate chips and gently pulse. Scoop out into muffin pan. I got 10 muffins out of this batter. Add additional chocolate chips on top (optional) and bake for 20-22 minutes. Insert a toothpick to make sure middle is cooked through.
