
I spent the day cooking up a storm for a cooking video and thought I would share with you a few of the recipes that were a big hit! These recipes are gluten free, dairy free, vegan and nutritious! The crispy tofu is super easy to make and a great meat substitute! And the no bake brownies! These are definitely a crowd pleaser. Most brownies are loaded with sugar, preservatives, and barely contain any nutrients! These ones are RAW, loaded with healthy fats, antioxidants, fiber and protein! Enjoy these yummy recipes!
Crispy Tofu Cubes (adapted from ReFresh, by Ruth Tal)
These Tofu cubes are seriosuly delicious! Most people tend to think Tofu is so bland and boring! Well think again. This marinade and crispy coating really make tofu stand out in this dish!
Marinade
Ingredients
3 1/2 cups tofu, cubed
1/2 cup apple cider vinegar
1/2 cup tamari
1/4 cup water
1 1/2 tbsp safflower/sunflower oil
Chop tofu into medium sized cubes. Mix remaining ingredients and pour over tofu. Marinate for 1-2 hrs in the fridge
Crispy Coating
Ingredients
1 cup flaked nutritional yeast
1/2 cup wheat germ
1 tbsp garlic powder
pinch sea salt, pepper and cayenne
Combine all ingredients in a bowl and mix well. This dry mix will last indefinitely! Its loaded with B12, fiber and protein!
Once Tofu has marinated, toss into crsipy coating and saute in olive oil for 3-4 minutes each side, until you get a nice crispy coating! These cubes are great in a salad or wrap. Raw Goji Carob Brownies
You’re gonna love these brownies! And they won’t leave your kitchen in a mess. Only 5 simple ingredients and no flour or dairy!
Ingredients
3 cups walnuts
1/2 cup carob powder
1-2 cups shredded coconut
1 cup goji berries
1 cup raw agave nectar (or honey)
Blend first 4 ingredients into a food processor fitted with the S blade. No need to over blend, as a few small walnuts pieces add great texture. Then with food processor running, slowing pour in agave nectar until mixture starts to stick together. Pour mixture into 8×8 brownie pan, pressing down firmly. Put in the fridge for 1 hr. ALL DONE!
